Chocolate Chip Cookies

Chocolate Chip Cookies 
2/3cup brown sugar 
2cups plain flour 
small pinch salt
100g butter
3tbsp golden syrup
1tsp vanilla extract 
1tsp bicarb soda
11/2 tbsp milk 
150g chopped milk chocolate
150g chopped white chocolate 


Preheat oven to 180c, line trays with baking paper. 
Sieve sugar, flour and salt in mixing bowl and make a well in the centre. 
Place butter, syrup and vanilla in saucepan over medium heat. When it bubbles remove from heat and add bicab, stirring to incorporate. 
When butter mixture is frothy, pour into well of dry ingredients, add milk and stir to combine. allow dough to slightly cool before adding choc chunks. 

Roll 16 heaped tablespoon of dough into balls and place on baking trays, slightly press down on them. Make sure there is enough space between them, using two trays will help this. Bake for 13 minutes then swap trays around, bottom one on top, top on bottom rack. bake for another 10 minutes. 
Take out of oven and leave on tray for a bit then transfer to wire rack.

Pear Teacake

I was going through some old cookbooks that Simon's grandma gave him. I found The Australian Women's Weekly 50 easy economical Cakes. Oh how food photography has come a long way.
Apple Teacake looks pretty easy, no apples in the fridge so I used Pear. It tasted lovely, even better with coffee.

Weekend in Sydney with the girls.

Sydney Trip with Melissa and Belinda.
We stayed in the city and unfortunately we didn't make it to The grounds for coffee. We did find a lot of shopping in Paddington and Darlinghurst (in the rain), such lovely little suburbs with great shopping. I was shocked not to see many cafes on the main street. On Crown Street we came across The Goods Cafe, it had fresh juices and yummy looking food. I had a coffee with a Walnut and Date biscuit. Mel had Banana bread and Belinda a little cake. Later that night we went to the Shady Pines bar where we were surrounded by taxidermy animals listening to country music(yes I know not usually my style but this place pulled it off). Such a great vibe in this little bar, well worth the visit. I guess you have to see it to believe it's level of coolness. 
The following day (rain again) we ventured out to the city malls, to try and get some cover from the rain and last minute shopping in. Stumbled across some cool street art and the pit street cupcake shop. Oh course we had to try them. Delicious!!
Then it was off to the airport and back home. Next time I think we will make it a summer time trip.
