No baking this sunday

No baking this Sunday as I'm off to Sydney with some of my closest friends. A weekend visit will have us staying the the heart of the city and exploring the outer suburbs for weekend markets and cute little coffee spots.

After seeing photos of The Grounds of Alexandria on whatkatieate Im very keen to check this cafe out. Please check out this Whatkatieate blog she has some really amazing photos.
The reviews are very mixed but that's ok, we will see how we go.
I'll be sure to post up some photo's on our return, I'm sure there will be cake to be eaten and blogged.

Flourless Orange Cake

My next door neighbour has an orange tree, it grows over our fence. I have oranges now!!!!!

I found this recipe at taste.com. It took an hour to bake and my only suggestion is to cover with foil close to the end, as mine got a little darker than what i'd normally like.

keep calm and bake on

Words to live by, baking gives me mixed emotions. It makes be smile and laugh and it also make me angry (when the recipe doesn't work). But overall it gives me a sense of calm, that is why I bake, oh and to master the sponge cake. One day I will get that cake to my grandma's standard. xx

Tim Tam Chocolate Brownies

Tim Tam Chocolate Brownies

1 cup Butter
85 grams unsweetened chocolate
1/2 cup semisweet choc chips
3 eggs
1tablespoon vanilla
1cup sugar
1/2cup plain flour
1/2tablespoon baking powder
1/2teaspoon salt
1/2 packet of Tim Tams

Preheat oven to 350f. Butter and line baking tray. In a heat proof medium bowl set over a saucepan of simmering water, add the chocolate and diced butter to bowl until melted. Cool slightly.

In a large bowl, whisk eggs, vanilla and sugar. Blend in chocolate mixture to the egg mixture, cool to room temp.

In another bowl sift flour, baking powder and salt. Add flour mixture into chocolate mixture and stir.

Cut Tim Tams in half.

Pour half the mixture into the baking pan, place tim tams on mixture then pour remaining mixture over the top of the tim tams. Bake for approx 30 minutes. I tend to cut them whilst they are still warm, and then put on cooling rack.

YELLOW LOVE IN THE KITCHEN

Today I found this yellow dish rack for one dollar at St Vinnies in Lavington, how could I pass it up. I also picked up a maxwell and williams butter dish because my friend Melissa inspired me to start using one. A touch of yellow to brighten up the kitchen.

Basic Sponge Cake

My Grandma made the best sponge cake when we were kids I loved that she made my sister and I one each. Tracy had the pink icing and I had the chocolate icing, these were great days. I hope to bake amazing sponge cakes just like grandma. I know she would be proud as my mother does not bake. My first attempt was a disaster, way too thin and nothing like sponge. My work friend Kelly gave me a new recipe to try. I was so excited when it worked out perfect. If only my grandma could be here to see it.

Kelly's Basic Sponge Cake Recipe
4 eggs
2/3cup caster sugar
1/3cup cornflour
1/3cup S/R Flour
1/3cup Plain Flour

Eggs at room temp, beat whole eggs until thick & creamy (approx 7mins). Add sugar slowly n beat until dissolved. Fold in sifted dry ingredients. Spread into 2 deep 20cm cake tins greased n lined with baking paper. Bake for 20mins in mod oven.
